Korean Sugar Candy (뽑기, Dalgona, Ppopgi)

Welcome back to Chelsea’s K-Food Recipes! Today, we’re making a fun and nostalgic Korean street snack — Dalgona (뽑기, Ppopgi).

This crunchy, sweet sugar candy became globally famous thanks to its playful charm and simple ingredients. In Korea, it was a childhood favorite, often shaped with cute cookie-cutter designs. Ready to make this nostalgic treat at home? Let’s begin!

🍬 Ingredients

  • 2 tbsp sugar
  • A pinch of baking soda (about 1/16 tsp)

🛠 Tools

  • Metal ladle or small pan
  • Chopstick or spoon for stirring
  • Flat metal spatula or press
  • Cookie cutters (optional)

👩‍🍳 Instructions

1️⃣ Melt the Sugar

Add sugar to a metal ladle or small pan.
Hold it over low heat and stir constantly until the sugar melts and becomes golden.
Be patient and avoid burning — low heat works best.

2️⃣ Add Baking Soda

Remove from heat and quickly add a pinch of baking soda.
Stir fast — the mixture will foam up and turn pale honey-colored.

3️⃣ Shape the Candy

Pour immediately onto parchment or a nonstick surface.
Wait 5–10 seconds, then press gently with a metal plate to flatten.
If desired, lightly press a cookie cutter into the surface to make a shape — do not cut all the way through.

4️⃣ Cool & Enjoy

Let the candy cool for 1–2 minutes until firm.
Enjoy as-is or try the traditional challenge: eat around the shape without breaking it!

💡 Tips for Perfect Dalgona

  • Stir constantly to avoid burning the sugar
  • Work quickly after adding baking soda — it hardens fast
  • Practice makes perfect — dalgona timing is all about speed and heat control

Dalgona is a wonderfully simple candy with big nostalgic charm — crunchy, sweet, and made with just two ingredients. It’s a fun project for kids, a great party idea, or a sweet little throwback to Korean street food culture.
