🍲 Ingredients
- 2–3 lbs (1–1.5 kg) oxtails
- 12 cups water
- 1 onion, halved
- 5–6 cloves garlic, peeled
- 2 green onions, whole (plus extra chopped for garnish)
- Salt, to taste
- Black pepper, to taste
- Soy sauce (optional, for serving)
Optional sides
- Chopped green onions
- Kkakdugi (깍두기)
- Steamed rice

1️⃣ Prep the Oxtails
- Rinse oxtails under cold water
- Soak 1–2 hours, changing water a few times to remove blood
2️⃣ Blanch
- Boil oxtails 5–10 minutes, then drain
- Rinse well to remove impurities
3️⃣ Make the Broth
In a clean pot, add:
- Oxtails
- 12 cups water
- Onion, garlic, green onions
Bring to a boil → simmer 4–6 hours
Skim foam for a clean broth.
4️⃣ Season
- Remove oxtails, strain broth
- Return oxtails to pot
- Season with salt & pepper to taste
5️⃣ Serve
- Ladle soup into bowls with oxtail pieces
- Garnish with green onion
- Serve with rice & kkakdugi
- Add soy sauce if desired

- Low & slow simmer = richer broth
- Add hot water if broth reduces too much
- For extra richness: refrigerate overnight, skim fat, reheat
